Whilst Shiptoin Mill originally created this flour specifically for Ciabatta recipes, it also works remarkably well for high hydrations doughs, sourdough and pizza.
High in protein, Shipton Mill’s Organic Ciabatta Flour supports the large air bubbles that form during the fermentation process and it’s these large bubbles that give Ciabatta its characteristic airy and open structured crumb.
